As October starts with World Vegetarian Day, this recipe is also a timely reminder of how enjoyable vegetarian eating can be. Vegetarian meals often need more chopping and cooking in steps, but the Megaprocess Food Processor and the Una Essential Kit make it easier by handling the prep and cooking side by side.
Serving these patties is as versatile as the way they are cooked. They can be set on the table straight from the SQ Professional Halogen Oven, still warm and crisp, and paired with a bowl of tzatziki and a fresh salad for a light meal. However they are enjoyed, they show that vegetarian food can be both practical and generous, whether cooked at home, in a small kitchen, or even on holiday.
- 200 g (1 cup) green or brown lentils
- 170 g (1 cup) quinoa
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp chilli flakes
- 2 tbsp flaxseed + 5 tbsp water
- 2 tbsp chopped parsley or coriander
- 5 leaves of fresh mint, finely chopped
- 2 tbsp olive oil for sautéing
- Salt and pepper to taste
- Juice of ½ lemon, optional

- Grind flaxseed in the Megaprocess Food Processor grinding mill, mix with water, cover with lid and set aside.
- Cook lentils in the large Una Essential Kit saucepan with salted water until soft, then drain and cool.
- Cook quinoa in the smaller saucepan with salted water, let stand for 5 minutes, then fluff, and let it cool.
- Sauté onion and garlic in the frying pan with olive oil, then add cumin and chilli and cook 1 minute.
- Lightly mash lentils in the Megaprocess bowl using the mixing blade on low speed, then mix in quinoa, flax mixture, herbs, and onion mix. Add salt and pepper to taste.
- Preheat the SQ Professional Halogen Oven to 200°C. Shape mixture into patties and place on a tray.
- Bake on the high rack 10–15 minutes, flip, then another 5 minutes until golden. (In a standard oven: 190 °C for 15–20 minutes, flipping halfway.)
- Patties should be firm and crisp; bake 2–3 minutes more if needed.
- Squeeze the lemon juice with Megaprocess citrus juicer and sprinkle it over patties.
- Serve with tzatziki and salad, garnish with lemon wedges.
Tips :
- Mixture consistency: Too wet? Add oat flour, ground oats, or quinoa. Too dry? Mix in a splash of water, olive oil, or a little more flaxseed mix.
- Hold the shape: Chill patties for 15 minutes before baking to firm them up.
- Cooking options: Bake in the halogen oven, air fryer, or regular oven. For pan-frying, use medium heat and a little oil.
- Storage: Store in the fridge for up to 3 days or freeze for later. Reheat in the oven straight from frozen until hot.
