These no-bake vegan energy balls, prepared with help of the K-Mojo Generation K Blender, combine chewy dates, tangy apricots, and pistachios rolled in a nutty crumb with warming thermogenic spices such as cinnamon and cardamom, plus an optional pinch of cayenne pepper for a gentle kick

- In the K-Mojo Generation K Blender with grinding mill attachment, pulse the pistachios into a coarse crumb, then set aside 2 tbsp in a shallow bowl for coating.
- Switch to the blending jug and add the dates (or date paste), drained apricots, cinnamon, cardamom, cayenne, and salt.
- Pulse in short bursts until the mixture starts to clump. If it feels too dry, blend in 1 tsp melted coconut oil to bring everything together and create a smoother, more pliable texture. Avoid over-blending into a paste.
- Transfer the mixture to an SQ Professional Borosilicate Bowl, knead lightly by hand, then cover with the lid and let it rest for 10 minutes.
- Scoop portions with a tablespoon from the SQ Professional Stainless Steel Cutlery Set and roll into balls.
- Roll each ball in the pistachio crumb and chill for 20 minutes to set.
Storage and freezing tips
- Store the energy balls in an airtight SQ Professional Crisper Glass container in the fridge for up to 7 days.
- For freezing, line the bottom of the container with baking paper and place a sheet between each layer of balls to prevent sticking. The container can be sealed and frozen for up to 2 months, then defrosted as needed.
