Tawa Pans, are a flat or concave disc-shaped frying pan or griddle, widely used in the cuisines of central, west and south Asia, where it is used to cook chaat, pav bhaji and tawa masala. They are also common in the cuisines of the Caucasus, the Balkans and the Caribbean.
The pan is usually made of cast iron, aluminium or carbon steel. It may be enamelled or given a non-stick surface. Its size in diameter varies between 8 inches to 12 inches. It can be up to a meter wide in some professional kitchens.
These versatile pans are used to prepare all kinds of flatbreads, ranging from chapatis and parathas to dosas and cheelas among others. Tawa pans are useful for shallow-frying fillets of meat, paneer cheese, pancakes, omelettes, French toast, etc.
